3 Ways to Enjoy Your New Favorite Winter Veggie

I snubbed sweet potatoes (or yams as they’re often called) for far too many years of my life. Luckily, over the past few years I’ve become
acquainted in a big way.
Organic sweet potatoes are a delicious winter vegetable that can be easily transformed into a dinner side, snack or even dessert. Plus, an excellent source of vitamin A, vitamin C and fiber – they’re super nutritious.
Here are three of my favorite ways to enjoy sweet potatoes:
French-fry style: Preheat the oven to 425. Slice potatoes into wedges or discs (or use a spiralizer if you have one.) Season the fries with a little pepper, sea salt, garlic and paprika. Grease pan and toss them in the oven for 40-45 minutes , turning half way through. They’re the perfect, slightly crunchy snack or dinner side.
Cinnamon Treat: Cut sweet potato in half. Use about a tsp of butter or margarine and top with cinnamon (and sugar if you really enjoy sweet.) Heat in the microwave for 2-3 minutes.
‘Italian’ Melt: Poke holes in potato and heat in the stove or microwave. Then, cut in half and scoop out a few tablespoons of the “insides.” Top with goat cheese (mozzarella or cheddar may also work well) oregano, garlic and pepper. Heat in the stove for 1- minutes at 400. Delicious!
