Though I have fake-a-tarian status, I was craving beef stroganoff for dinner. Luckily I had some of the leftover egg noodles and Boca beef crumbles (<a href="http://www.greenphillyblog.com/2012/01/25/shit-green-people-say-a-green-philly-blog-film" target="_blank">a prop for my Sh*t Green People Say satire</a>) and took a trip to Whole Foods.  I played off the <a href="http://www.vegetariancasserolequeen.com/uncategorized/vegetarian-beef-stroganoff" target="_blank">Vegetarian Casserole Queen's recipe</a> and made my own half-assed twist.

So I knew I officially turned old/domesticated/boring at the ripe ol' age of 28 when my parents gave me 2 casserole dishes for my birthday... And for Christmas I received (<em>after asking for</em>) a 9-cup, Kitchen Aid Food Processor.  I was so excited to use it, I processed all 4 veggies in my house on Christmas day!

The rest of my recipe was impromptu, so feel free to experiment on your own for the veggies, cheese &#38; portions. Enjoy!

It brings me back to my childhood and makes the cold seem more bearable

I love this vegan twist on a childhood favorite.  It’s simple, delicious and comforting.

Plus, sometimes it just feels good to make something from "scratch" rather than use a prepackaged food.
